Rose Rumeli Hardaliye

Hardaliye is a natural, traditional beverage dating back nearly 500 years to the Ottoman period. It is the first product from our region to receive a geographical indication. As recorded by Evliya Çelebi in the 17th century, mustard seeds were added to freshly harvested grapes in the Balkans to prevent fermentation, while sour cherry or quince leaves enhanced the aroma. This unique method gave the drink its name: Hardaliye.

Today, Hardaliye is enjoyed mainly in Türkiye’s Aegean and Marmara regions. Made from red–black aromatic grapes, mustard seeds, and a touch of vinegar, it offers a sharp, lightly spiced flavor and is best served chilled.

Rich in phenolic compounds, Hardaliye is known for its natural antioxidant and antimicrobial properties, contributing positively to overall well-being.

Common grape varieties used are Cabernet, Merlot, Shiraz, Öküzgözü, Pamit, Papazkarası, Cardinal, and Alphonse.

Rose:
With its very smooth taste and gentle aroma, this variety pairs especially well with white meats such as fish and chicken. It is produced either by blending Red and Gold Hardaliye or by using Red Gold grape varieties harvested at peak season. The grapes are gently crushed and mixed with black mustard seeds and sour cherry leaves, then left to ferment in vats for an average of 45 days. Once it reaches ideal drinkability, it is bottled and offered for consumption.
