Red Rumeli Hardaliye

Hardaliye is a natural, traditional beverage dating back nearly 500 years to the Ottoman period. It is the first product from our region to receive a geographical indication. As recorded by Evliya Çelebi in the 17th century, mustard seeds were added to freshly harvested grapes in the Balkans to prevent fermentation, while sour cherry or quince leaves enhanced the aroma. This unique method gave the drink its name: Hardaliye.

Today, Hardaliye is enjoyed mainly in Türkiye’s Aegean and Marmara regions. Made from red–black aromatic grapes, mustard seeds, and a touch of vinegar, it offers a sharp, lightly spiced flavor and is best served chilled.

Rich in phenolic compounds, Hardaliye is known for its natural antioxidant and antimicrobial properties, contributing positively to overall well-being.

Common grape varieties used are Cabernet, Merlot, Shiraz, Öküzgözü, Pamit, Papazkarası, Cardinal, and Alphonse.

RED:
With its strong aroma and smoother taste, this variety pairs especially well with red meat. It is also the only type that can be mixed with mineral water—traditionally served alongside Turkish coffee—to create a naturally sparkling drink. Made from high-quality Cabernet Sauvignon grapes, harvested at peak season and gently crushed, the mixture is enriched with black mustard seeds and sour cherry leaves. After an average fermentation period of 45 days in vats, it is bottled once it reaches perfect drinkability and offered for consumption.

Best served chilled.
