Product details

Rumeli Hardaliye is a naturally fermented grape drink whose story begins nearly 500 years ago in the Ottoman Balkans — Rumeli. Crafted today in Kırklareli, Thrace, it was the first product of its region to earn a protected geographical indication. Whole grapes are fermented for around 45 days with mustard seed, which stops alcohol from ever forming — giving a sharp, lightly spiced, refreshingly dry drink.

Classic — the original recipe: five aromatic red-black grapes — Papazkarası, Cabernet Sauvignon, Merlot, Shiraz and Alphonse — for the balanced, benchmark hardaliye.

Red — our boldest expression, made purely from Cabernet Sauvignon. Deep color, intense dark fruit and a long spiced finish.

Rose — the lightest of the family: Red Globe grapes blended with our Red and Gold, for a blush color and a crisp, fruit-forward character.

Gold — the white hardaliye, made from Sémillon and Sauvignon Blanc. Golden-hued, smooth and aromatic — the most elegant of the range.

Every bottle is 100% grape — no water, no added sugar, no preservatives, 0.0% alcohol by nature, not by processing. Available in 750 ml and 200 ml. Best served chilled at 8–10°C.

The aroma of ripe grapes with a gentle warmth from mustard seed. The flavour is sweet-sharp with a mild tang and a clean, lightly spiced finish. Serve it well chilled, on its own or alongside food — it pairs anywhere you'd pour a wine: grilled meats, mezze, aged cheeses and dark chocolate.

Classic — deep red-purple; round and balanced, the fullest expression of the five-grape blend. Pair with: köfte, red meat, hard cheeses.

Red — the darkest and boldest; intense black fruit, firmer tang, longest finish. Pair with: steak, lamb, dark chocolate.

Rose — blush-coloured, light and crisp; the fruitiest and most refreshing of the four. Pair with: mezze, salads, white cheese — or as an aperitif.

Gold — golden-hued, smooth and aromatic; softer spice, with delicate white-fruit notes. Pair with: seafood, chicken, baklava and fruit desserts.

Serve it well chilled, on its own or alongside food.

Hardaliye was born over 500 years ago in Ottoman Rumeli, where harvesters found that mustard seed kept grape must from turning into wine. Evliya Çelebi wrote of drinking it on his 17th-century travels, and in 1930 Atatürk — served hardaliye in Kırklareli — urged that it become the national drink. It remains the region's first product with a protected geographical indication.

Rumeli Hardaliye keeps that tradition alive in Kırklareli, Thrace. Grapes from local vineyards are fermented naturally on skin and seed with mustard seed and cherry leaf — no shortcuts — and bottled in our own facility under strict hygiene standards. Just grapes, mustard seed and 500 years of know-how.

Today it is enjoyed most in Türkiye's Aegean and Marmara regions, and now beyond.

Best served well chilled at 8–10°C. Shake gently before opening.

Enjoy it:

  • On its own, over ice, or topped with sparkling water as an alcohol-free spritz
  • As a 0.0% aperitif — in a wine glass, wherever you'd pour a wine
  • With meze, olives, hummus and a cheese & charcuterie board
  • Alongside grilled meats — steak, lamb chops, köfte, kebab, BBQ
  • With rich or spiced dishes: pasta, risotto, mushroom dishes, Turkish and Mediterranean cuisine
  • After dinner with dark chocolate, baklava or aged cheese

Find your match:

  • Classic is the all-rounder for the dinner table — köfte, grills and hard cheeses.
  • Red stands up to steak, lamb and dark chocolate.
  • Rose, served extra cold, shines as an aperitif with meze, salads and white cheese.
  • Gold pairs beautifully with seafood, chicken and desserts like baklava.

From Thrace, since the Ottomans

A 500-year-old drink from the Balkans.

Hardaliye was born in Rumeli — Ottoman Thrace — almost five centuries ago. Mustard seed ('hardal') was pressed in with freshly harvested grapes to hold the fermentation, and the drink took its name from it.

Rumeli's Hardaliye is still made the traditional way in Kırklareli, from red-black aromatic grapes, naturally fermented for around 45 days. It was the first drink of its region to earn a protected geographical indication.

Grapes, mustard seed and patience — the recipe hasn't changed in 500 years.
Rumeli Hardaliye Rose bottle with grapes

All the complexity of wine — healthier in every way.

Fermented on skin and seed like a fine red, but with 0.0% alcohol and no added sugar. Everything you love about wine at the table, without anything you don't.

0.0% ABV

Alcohol never forms — mustard seed stops it naturally. Drink it any day, any hour, and drive home after.
